3 large zucchini
1 clove garlic
5 mint leaves
3 basil leaves
6 to 8 tablespoons EVOO
Seas salt to taste
Freshly ground black pepper
- Wash zucchini well and remove 2 ends.
- Cut zucchini lengthwise in very thin slices using mandolin or vegetable peeler.
- Prepare sauce.
- In small bowl, add finely chopped. mint, garlic and basil.
- Add pinch of seas salt, freshly ground pepper and EVOO.
- Mix with spoon.
Marinate for 1 hour before serving.
