Insalata di Zucchini

Ingredients

  • 3 large zucchini

  • 1 clove garlic

  • 5 mint leaves

  • 3 basil leaves

  • 6 to 8 tablespoons EVOO

  • Seas salt to taste

  • Freshly ground black pepper

Directions

  • Wash zucchini well and remove 2 ends.
  • Cut zucchini lengthwise in very thin slices using mandolin or vegetable peeler.
  • Prepare sauce.
  • In small bowl, add finely chopped. mint, garlic and basil.
  • Add pinch of seas salt, freshly ground pepper and EVOO.
  • Mix with spoon.
    Marinate for 1 hour before serving.
