Chef Nino’s marinated mushrooms

Culinary educator Chef Nino Elia will be creating farm-fresh recipes at the Lititz Farmers Market throughout the 2019 season.


  • 8 ounces of fresh mushrooms of your choice

  • ¼ cup EVOO

  • Sea salt to taste

  • 3 garlic cloves

  • ¼ bunch of fresh Italian parsley

  • Crostini or crusty Italian bread


  • Slice mushrooms.
  • Add a pinch of sea salt, EVOO, chopped garlic and chopped parsley.
  • Place in a tightly sealed container to marinate for about 1 hour.
  • Serve over crostini, or crusty Italian bread.


Use a damp paper towel or a soft mushroom brush to clean mushrooms. Mushrooms are like little sponges, too much water makes them soggy. Water-logged mushrooms do not brown nicely.

Best to clean each mushroom individually. If pressed for time, lightly rinse in cold water, then pat dry with a paper towel.
